Simple ideas for leftover barbecued meats
Summer is the season of barbecues and these tips help make the most of any leftovers
Don’t relegate leftover barbecue meats to simple sandwiches or - no, don’t say it - the bin! Reinvent your flavourful proteins into new recipes and transform leftovers into easy dinners, quick lunches and even portable picnic fare.

Storage and reheating
Correct storage of leftover barbecued meats is the same as any other cooked meat. Put in an airtight container (separate from other leftovers) or wrap tightly in aluminum foil and refrigerate immediately. Keep in the fridge up to 4 days, or store in the freezer for up to 1 month. If grabbing leftover barbecued meat from the freezer, defrost in the fridge, then cook thoroughly again when you’re ready to eat – especially sausages or other pre-processed meat.

Serving cold
Forget reheating barbecued leftovers altogether with fresh salads and wraps. Thinly slice steak for Vietnamese-inspired rice paper rolls, or pair leftover butterflied lamb (or any leftover sliced lamb) with lentils and a homemade pickled onion in this picnic-friendly lamb wrap. Shred chicken for a noodle salad, or flake white fish and use as a filling for top-notch tacos.

Serving hot
Chop leftover sausage from last night’s barbecue and combine with scrambled egg for a hearty breakfast. With wilted spinach and pillowy eggs, you simply can’t go wrong. Saved snags can also feature in pasta, such as with broccoli and tomato in this delicious weeknight dinner.
